Method
 

  1. Prepare the Sweet Potato: Boil sweet potato cubes in water for 15–18 minutes until fork-tender. Drain and mash with a potato ricer or masher until smooth.
  2. Prepare the Filling: In a bowl, mix the mashed sweet potatoes with brown sugar, cinnamon, and nutmeg until well combined.
  3. Prepare the Pastry: Let puff pastry sheets soften to room temperature. Cut each sheet into quarters for eight equal-sized squares.
  4. Fill the Pastry: Scoop two tablespoons of the sweet potato mixture onto each square. Optionally, add mini marshmallows. Fold the pastry over and seal with a fork.
  5. Bake the Turnovers: Place the turnovers on a parchment-lined baking tray, brush with egg wash, and bake at 400°F until golden and flaky, about 20–25 minutes.
  6. Prepare the Glaze: Whisk together powdered sugar, milk, maple syrup, and vanilla extract in a small bowl until smooth.
  7. Serve: Drizzle the maple glaze over the warm turnovers and enjoy!
