Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp BBQ seasoning
  • ½ cup grated parmesan cheese
  • 4 tbsp unsalted butter (softened)
  • 1 tbsp roasted garlic paste
  • 1 tbsp chopped fresh parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp buffalo sauce (optional, for extra heat)
  • ½ tbsp mayonnaise (for extra juiciness)
  • Wooden skewers

  • Grill or air fryer

Method
 

  1. Cut & Marinate: Cut chicken thighs into 1-inch pieces. Toss with olive oil and BBQ seasoning, then marinate for 20 minutes to 4 hours.
  2. Soak Skewers: Soak wooden skewers in water for 30 minutes.
  3. Make Garlic Parmesan Butter: Mix butter, parmesan, roasted garlic paste, parsley, salt, black pepper, and buffalo sauce.
  4. Thread Chicken: Skewer the marinated chicken, leaving space between pieces.
  5. Cook the Skewers:
    1. Grill: Cook over medium-high heat for 12-15 minutes, turning often.
    2. Air Fryer: Cook at 400°F (200°C) for 12-15 minutes, flipping halfway.
  6. Brush & Serve: Brush with garlic parmesan butter in the last few minutes. Rest for 2 minutes and serve hot!
