Step 1: Marinate & Cook the Chicken
- Season chicken with oil, oregano, garlic powder, salt, cumin, garam masala, and chili flakes. Let sit 10–15 min. Cook until golden and fully done. Rest, then dice.
Step 2: Sauté the Aromatics
- Cook onion in oil until soft. Add garlic, stir for 30 seconds. Toss in mushrooms and Italian seasoning, cook till golden.
Step 3: Make the Cream Sauce
- Add flour to mushrooms, stir 1 min. Pour 2 cups stock slowly while whisking. Add remaining stock and cream, season with salt and pepper. Simmer 5 min.
Step 4: Cook the Pasta
- Add spaghetti into the sauce. Boil, then simmer with lid slightly ajar for 20 minutes. Stir occasionally.
Step 5: Mix and Finish
- Add diced chicken, then mix in cream cheese until melted. Stir in parmesan and spinach until blended and wilted. Let sit 2–3 minutes before serving
