Ingredients
  

  • 2 Chicken breasts – Boneless, skinless
  • 3 tbsp Olive oil
  • 1 tsp Oregano
  • 1 tsp Garlic powder
  • Salt to taste
  • ½ tsp Cumin powder
  • ½ tsp Garam masala (optional)
  • ½ tsp Crushed chili flakes
  • 1 Onion (diced)
  • 4 Garlic cloves (minced)
  • 2 cups White mushrooms (sliced)
  • 1 tsp Italian seasoning
  • 3 tbsp All-purpose flour
  • 6 cups Chicken stock
  • 1 cup Heavy cream
  • 7 oz Spaghetti
  • 1 cup Cream cheese (cubed)
  • 1 cup Parmesan cheese (grated)
  • 3 cups Fresh spinach

Equipment

  • Large pot – For cooking the sauce and pasta together
  • Skillet or grill pan – For cooking the chicken
  • Cutting Board – For prepping vegetables and chicken
  • Sharp knife – For slicing mushrooms, onions, and chicken
  • Whisk – To blend flour and stock smoothly into the sauce
  • Grater – For fresh parmesan cheese

Method
 

Step 1: Marinate & Cook the Chicken
  1. Season chicken with oil, oregano, garlic powder, salt, cumin, garam masala, and chili flakes. Let sit 10–15 min. Cook until golden and fully done. Rest, then dice.
Step 2: Sauté the Aromatics
  1. Cook onion in oil until soft. Add garlic, stir for 30 seconds. Toss in mushrooms and Italian seasoning, cook till golden.
Step 3: Make the Cream Sauce
  1. Add flour to mushrooms, stir 1 min. Pour 2 cups stock slowly while whisking. Add remaining stock and cream, season with salt and pepper. Simmer 5 min.
Step 4: Cook the Pasta
  1. Add spaghetti into the sauce. Boil, then simmer with lid slightly ajar for 20 minutes. Stir occasionally.
Step 5: Mix and Finish
  1. Add diced chicken, then mix in cream cheese until melted. Stir in parmesan and spinach until blended and wilted. Let sit 2–3 minutes before serving
