Method
 

  1. Cook the Chicken: Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper. Cook the chicken thighs for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F.
  2. Make the Sauce: Remove chicken and create a gap in the center of the pan. Add garlic, sun-dried tomatoes, and Italian herbs. Deglaze the pan with chicken stock, scraping up flavorful bits from the bottom. Stir in spinach and let simmer for 10 minutes.
  3. Finish the Dish: Once the spinach is wilted, add heavy cream and parmesan cheese. Stir until the sauce thickens and coats the chicken. Return chicken to the pan to coat with the sauce.
  4. Serve: Remove the chicken from the pan and serve immediately with a side of mashed potatoes, rice, or orzo pasta.
