Ingredients
  

Chicken:
  • 500 g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tbsp olive or vegetable oil
Teriyaki Sauce:
  • ΒΌ cup low-sodium soy sauce
  • 2 tbsp sake
  • 2 tbsp mirin
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 1 tsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch (mixed with 1 tbsp water)
Optional Ingredients:
Garnish:
  • Green onions, chopped
  • Sesame seeds
For Extra Flavor:
  • 1 tsp sesame oil (for richness)
  • Lemon juice or white wine vinegar (for added tanginess)
Healthier Substitutes:
  • Tamari (gluten-free soy sauce)
  • Coconut aminos (soy-free)
  • Light brown sugar or granulated sugar
  • Arrowroot starch (instead of cornstarch)

Method
 

Marinate:
  1. In a bowl, combine soy sauce, sake, mirin, honey, brown sugar, rice vinegar, garlic, and ginger.
  2. Add chicken pieces and marinate for at least 30 minutes (overnight for best results).
Cook Chicken:
  1. Heat oil in a skillet over medium-high heat.
  2. Add chicken and cook for 6-8 minutes, until golden brown and cooked through.
  3. Remove chicken from the pan and set aside.
Make Sauce:
  1. In the same skillet, add the remaining marinade and bring to a simmer.
  2. Stir in the cornstarch slurry to thicken the sauce, cooking for 2-3 minutes until glossy.
Combine:
  1. Return the cooked chicken to the pan, coating it with the thickened teriyaki sauce.
  2. Cook for another 2-3 minutes to let the flavors meld.
Serve:
  1. Serve hot over white or brown rice.
  2. Garnish with chopped green onions and sesame seeds.
