Marinate:
- In a bowl, combine soy sauce, sake, mirin, honey, brown sugar, rice vinegar, garlic, and ginger.
- Add chicken pieces and marinate for at least 30 minutes (overnight for best results).
Cook Chicken:
- Heat oil in a skillet over medium-high heat.
- Add chicken and cook for 6-8 minutes, until golden brown and cooked through.
- Remove chicken from the pan and set aside.
Make Sauce:
- In the same skillet, add the remaining marinade and bring to a simmer.
- Stir in the cornstarch slurry to thicken the sauce, cooking for 2-3 minutes until glossy.
Combine:
- Return the cooked chicken to the pan, coating it with the thickened teriyaki sauce.
- Cook for another 2-3 minutes to let the flavors meld.
Serve:
- Serve hot over white or brown rice.
- Garnish with chopped green onions and sesame seeds.
