Ingredients
  

For the Chicken:

  • 1 tsp Italian seasoning

  • ½ tsp cracked black pepper
For the Salad:
  • 1 English cucumber diced
  • ½ cup grilled corn kernels fresh or canned, drained
  • 1 avocado diced
  • 2 tbsp fresh chives chopped
For the Dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove minced
  • Salt & pepper to taste

Method
 

Marinate & Grill the Chicken:
  1. In a bowl, toss the chicken with olive oil, lemon juice, Italian seasoning, salt, and pepper.
  2. Let it marinate for 15-20 minutes.
  3. Preheat the grill to 400-450°F and oil the grates.
  4. Grill the chicken for 4-5 minutes per side, until the internal temperature reaches 165°F.
  5. Let the chicken rest for 5 minutes before dicing it into bite-sized pieces.
Prepare the Dressing:
  1. In a small bowl, whisk together olive oil, white wine vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  2. Set aside.
Assemble the Salad:
  1. In a large bowl, combine diced chicken, cucumber, grilled corn, avocado, and chives.
  2. Drizzle with the dressing and toss gently to coat.
  3. Taste and adjust seasoning if needed.
