Ingredients
  

  • 300 g Penne pasta
  • 2 Chicken breasts (pan-fried until golden)
  • 2 cloves Garlic (minced)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • ½ tsp Cayenne pepper
  • 1 tbsp Olive oil
  • 1 can Crushed tomatoes (400g)
  • 1-2 tsp Crushed red pepper flakes (adjust spice level)
  • 1 tsp Sugar (optional)
  • 1 cup Fresh spinach
  • ½ cup Fresh basil
  • Salt and pepper to taste
  • Freshly grated Parmesan (for garnish)

Method
 

Prepare the Chicken:
  1. Slice chicken breasts into thinner cutlets. Mix garlic powder, onion powder, smoked paprika, and cayenne pepper. Rub evenly over the chicken.
Sear the Chicken:
  1. Heat olive oil in a skillet over medium heat. Add the chicken and cook until golden on both sides. Remove from heat and set aside.
Make the Sauce:
  1. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in white wine (or chicken broth) and let it bubble for a minute. Stir in crushed tomatoes and red pepper flakes. Let simmer for 5-10 minutes.
Add Chicken and Herbs:
  1. Slice the chicken into strips. Add spinach and basil to the sauce for freshness and flavor infusion.
Combine with Pasta:
  1. Add cooked pasta to the sauce and toss to combine. If needed, add a splash of pasta cooking water to adjust consistency. Serve topped with freshly grated Parmesan.
