Ingredients
  

  • 4 cans 21 oz each original baked beans (or any halal-certified variety)
  • 1 tsp onion powder
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • 1 tsp BBQ rub
  • 1 tbsp minced garlic
  • 1/4 tsp red pepper flakes
  • 1 cup ketchup
  • 1 cup BBQ sauce
  • 1/4 cup Dijon mustard
  • 2 tbsp molasses
  • 3/4 cup BBQ sauce additional, based on preference
  • 8 strips chopped beef bacon
  • 6 slices halal peppered beef bacon or turkey beef bacon
  • 1 yellow onion
  • 1 chopped onion additional if needed
  • 3 jalapenos or 1 green pepper for less heat
  • 1/2 cup dark brown sugar
  • 1/4 cup apple cider vinegar

Equipment

  • Pellet smoker or oven
  • Cast iron skillet (12-inch recommended)
  • Sheet pan
  • Parchment paper
  • Smoker-safe baking dish or disposable aluminum pan
  • Knife and cutting board

Method
 

  1. Preheat oven to 400°F and cook beef bacon on a sheet pan lined with parchment paper for 25–30 minutes until slightly crispy.
  2. Chop cooked bacon, onion, and green pepper into small pieces.
  3. In a smoker-safe dish, mix baked beans, chopped onion, green pepper, ketchup, BBQ sauce, Dijon mustard, and cooked beef bacon.
  4. In a skillet, sauté jalapenos and onions in bacon grease for 3–5 minutes for rich flavor.
  5. Top the bean mixture with bacon chunks, then place the dish in a preheated smoker at 250°F.
  6. Smoke for 3 hours, then let rest for 10–15 minutes before serving.
