Ingredients
  

  • 1.5 lbs boneless chicken thighs or breasts
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 2 tbsp olive oil
  • Salt and pepper to taste
For the Rice
  • 1.5 cups basmati or long-grain rice
  • 2 tbsp olive oil or chicken fat
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • A pinch of saffron (optional)
  • Salt to taste
  • 3 cups water or broth
For the White Sauce
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp white wine vinegar
  • Salt and pepper to taste
Optional Toppings
  • Chopped lettuce
  • Diced tomatoes
  • Pickled onions
  • Fresh parsley or herb oil

Equipment

Method
 

1. Marinate the Chicken
  1. Combine lemon juice, garlic, oregano, coriander, oil, salt, and pepper. Add chicken and marinate for 30 minutes to 4 hours.
2. Prepare the Rice
  1. Toast rice in oil or drippings, then simmer with cumin, turmeric, saffron, and water until fluffy and yellow.
3. Make the White Sauce
  1. Mix mayo, yogurt, lemon juice, garlic, and vinegar in a bowl. Chill for 15 minutes to let flavours combine.
4. Cook the Chicken
  1. Grill or pan-sear marinated chicken until fully cooked and slightly charred on both sides.
5. Assemble the Plate
  1. Spoon rice onto a plate, top with sliced chicken, drizzle with white sauce, and garnish with optional toppings.
