Method
 

  1. Tenderize the Beef: Gently pound the beef slices with a mallet until tender and even.
  2. Season the Beef: Brush both sides with olive oil, and season with salt and pepper.
  3. Create the Filling: Sauté spinach, garlic, and onions in butter until soft and fragrant.
  4. Assemble the Rolls: Lay a slice of prosciutto on each beef slice, then add provolone cheese and the sautéed spinach mixture.
  5. Roll and Secure: Roll the beef tightly and secure with skewers.
  6. Prep the Grill: Clean the grill grates before placing the rolls on the grill.
  7. Grill the Beef Rolls: Grill each side for 10–15 minutes to reach medium-rare (128°F internal temperature).
  8. Let It Rest: Allow the beef rolls to rest for a few minutes before serving.
  9. Serve: Garnish with herbs and serve with optional sauces.
