Soften Dates:
- Heat 1/4 cup milk in a small fry pan on low. Once warm, add chopped dates. Let them soak for 10–15 minutes.
Blend Wet Ingredients:
- In a blender, combine sugar and oil. Blend until smooth.
- Add eggs and blend again.
- Add soaked dates and milk. Blend for 2 more minutes.
Prepare Dry Ingredients:
- In a mixing bowl, whisk together flour, baking powder, and salt.
Combine Mixtures:
- Slowly pour the blended wet mixture into the dry ingredients. Fold gently until combined. Do not overmix.
Bake the Cake:
- Preheat oven to 350°F (175°C). Grease or line a baking pan.
- Pour batter into the pan and spread evenly.
- Bake for 30–35 minutes. Check with a toothpick at 25 minutes.
Cool & Serve:
- Let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool fully.
- Optional: Top with powdered sugar glaze, whipped cream, or crushed nuts.
