Ingredients
  

  • 8 juicy dates (seeds removed, chopped)
  • ¼ cup milk
  • ½ cup oil
  • ½ cup sugar
  • 2 eggs
  • ¾ cup all-purpose flour (maida)
  • 1 tsp baking powder
  • 1 tsp vanilla essence (optional)
  • Pinch of salt

Method
 

Soften Dates:
  1. Heat 1/4 cup milk in a small fry pan on low. Once warm, add chopped dates. Let them soak for 10–15 minutes.
Blend Wet Ingredients:
  1. In a blender, combine sugar and oil. Blend until smooth.
  2. Add eggs and blend again.
  3. Add soaked dates and milk. Blend for 2 more minutes.
Prepare Dry Ingredients:
  1. In a mixing bowl, whisk together flour, baking powder, and salt.
Combine Mixtures:
  1. Slowly pour the blended wet mixture into the dry ingredients. Fold gently until combined. Do not overmix.
Bake the Cake:
  1. Preheat oven to 350°F (175°C). Grease or line a baking pan.
  2. Pour batter into the pan and spread evenly.
  3. Bake for 30–35 minutes. Check with a toothpick at 25 minutes.
Cool & Serve:
  1. Let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool fully.
  2. Optional: Top with powdered sugar glaze, whipped cream, or crushed nuts.
