Method
- Preheat oven to 200°C (400°F).
- Pat dry drumsticks with a paper towel.
- Season flour with chilli, cayenne, garlic, salt, pepper.
- Dredge chicken in flour, then dip into egg.
- Coat evenly in panko breadcrumbs.
- Place on wire rack, spray lightly with oil.
- Bake for 30–35 mins (flip halfway) or fry 10–12 mins until golden.
- Rest 5 minutes before serving with your favourite sides.
