Ingredients
  

  • 8 chicken drumsticks (thawed, patted dry)
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 1 tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • ½ tsp chilli flakes
  • ½ tsp garlic powder (optional)
  • Salt to taste
  • Spray oil or 2–3 tbsp canola/olive oil for frying

Equipment

  • Oven or frying pan
  • Wire rack & baking tray (for baking)
  • Mixing Bowls
  • Tongs
  • Shallow dishes (for flour, egg, crumbs)

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Pat dry drumsticks with a paper towel.
  3. Season flour with chilli, cayenne, garlic, salt, pepper.
  4. Dredge chicken in flour, then dip into egg.
  5. Coat evenly in panko breadcrumbs.
  6. Place on wire rack, spray lightly with oil.
  7. Bake for 30–35 mins (flip halfway) or fry 10–12 mins until golden.
  8. Rest 5 minutes before serving with your favourite sides.
