- Boil Pasta: In a large pot, bring water to a boil. Cook your pasta according to package directions (usually 6–8 minutes). Drain and reserve ½ cup pasta water, then set pasta aside.
- Sauté Aromatics: In a sauté pan, heat olive oil over low-medium heat. Add chopped onions and minced garlic, cooking for 4–5 minutes until soft. Remove from heat.
- Blend the Sauce: In a high-speed blender or food processor, combine cottage cheese, parmesan, milk, sautéed onions and garlic, lemon juice, salt, and black pepper. Blend until creamy and smooth.
- Combine and Heat: Let the pasta cool for 2–3 minutes to avoid curdling. Then, pour the blended sauce over the pasta. Add a bit of reserved pasta water to adjust consistency. Stir gently to combine.
- Warm and Serve: If needed, reheat everything over low heat until warm enough to serve. Top with extra parmesan, adjust seasoning, and enjoy your creamy, halal pasta!
Notes
Most cottage cheese is pretty salty so you probably won’t need additional salt. But since it depends on the brand of cottage cheese, add salt if needed.
