- 3 chicken thigh fillets
- 3 bacon rashers
- 3 slices onion
- 3 slices capsicum
- 1.5 tbsp garlic butter (softened & chilled)
- 1.5 tbsp mustard
- ½ cup chicken stock
- Fresh parsley (for garnish)
Step 1: Prepare the Chicken

Lay onion slices, capsicum slices, garlic, and a slice of butter on top of the flattened chicken.
Spread a thin layer of mustard over the chicken for extra flavor.
Prepare garlic butter by mixing crushed garlic with softened butter, rolling it in cling wrap, and chilling it in the fridge for easier slicing.
Step 3: Assemble the Mignons
Roll up each chicken thigh tightly, ensuring the filling stays inside.
Wrap a bacon rasher around each roll and secure it with toothpicks.
Place the wrapped chicken rolls in a lined baking dish for easy cleanup.
Step 4: Bake the Mignons
Top each roll with a small knob of butter for extra moisture.
