Ingredients
  

  • 3 chicken thigh fillets
  • 3 bacon rashers
  • 3 slices onion
  • 3 slices capsicum
  • 1.5 tbsp garlic butter (softened & chilled)
  • 1.5 tbsp mustard
  • ½ cup chicken stock
  • Fresh parsley (for garnish)

Method
 

Step 1: Prepare the Chicken
  1. Place chicken thigh fillets between two sheets of baking paper.
  2. Use a kitchen mallet to pound the chicken evenly for tender and easy-to-roll pieces.
Step 2: Add Flavor
  1. Lay onion slices, capsicum slices, garlic, and a slice of butter on top of the flattened chicken.
  2. Spread a thin layer of mustard over the chicken for extra flavor.
  3. Prepare garlic butter by mixing crushed garlic with softened butter, rolling it in cling wrap, and chilling it in the fridge for easier slicing.
Step 3: Assemble the Mignons
  1. Roll up each chicken thigh tightly, ensuring the filling stays inside.
  2. Wrap a bacon rasher around each roll and secure it with toothpicks.
  3. Place the wrapped chicken rolls in a lined baking dish for easy cleanup.
Step 4: Bake the Mignons
  1. Top each roll with a small knob of butter for extra moisture.
  2. Pour chicken stock into the dish, covering the chicken halfway.
  3. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, or until the bacon is crispy and golden brown and the chicken is fully cooked.
Step 5: Serve & Enjoy
  1. Let the chicken rest for 5 minutes before serving to enhance flavor.
  2. Garnish with fresh parsley and serve with mashed potatoes, roasted vegetables, or a crisp salad.
