Step 1: Prepare the Chicken
- Place chicken thigh fillets between two sheets of baking paper.
- Use a kitchen mallet to pound the chicken evenly for tender and easy-to-roll pieces.
Step 2: Add Flavor
- Lay onion slices, capsicum slices, garlic, and a slice of butter on top of the flattened chicken.
- Spread a thin layer of mustard over the chicken for extra flavor.
- Prepare garlic butter by mixing crushed garlic with softened butter, rolling it in cling wrap, and chilling it in the fridge for easier slicing.
Step 3: Assemble the Mignons
- Roll up each chicken thigh tightly, ensuring the filling stays inside.
- Wrap a bacon rasher around each roll and secure it with toothpicks.
- Place the wrapped chicken rolls in a lined baking dish for easy cleanup.
Step 4: Bake the Mignons
- Top each roll with a small knob of butter for extra moisture.
- Pour chicken stock into the dish, covering the chicken halfway.
- Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, or until the bacon is crispy and golden brown and the chicken is fully cooked.
Step 5: Serve & Enjoy
- Let the chicken rest for 5 minutes before serving to enhance flavor.
- Garnish with fresh parsley and serve with mashed potatoes, roasted vegetables, or a crisp salad.
