Ingredients
  

  • 1 lb Fresh kumquats sliced thin, seeds removed
  • 1 cup Granulated sugar
  • 1/4 cup Filtered water
  • 1 Vanilla bean split and scraped, or 1 teaspoon vanilla paste
  • 1/2 teaspoon Ground ginger

  • Saucepan (for making the vanilla simple syrup)
  • Mason jar (for storing kumquats)
  • Slotted spoon (for removing kumquats from syrup)
  • Baking sheet (for drying kumquats)
  • Parchment paper or Silpat (for lining the baking sheet)
  • Wooden spoon (for stirring syrup)
  • Heat-safe funnel (for transferring syrup, optional)

Method
 

  1. Prepare Vanilla Simple Syrup: In a saucepan, combine sugar, water, and vanilla pod/beans. Stir until sugar dissolves, bring to a boil, and then simmer for 4 minutes.
  2. Cook the Kumquats: Add sliced kumquats to syrup, simmer for 10 minutes, then transfer to a mason jar. Reduce syrup for 5 minutes and pour over kumquats, seal, and cool before refrigerating.
  3. Blanch (Optional): Blanch kumquats in boiling water for 2 minutes, then transfer to an ice bath.
  4. Bake and Coat: Place kumquats on a baking sheet, bake at 200°F for 2 hours. After cooling, roll them in sugar.
